Praline feuilletine brings a thin, delicate crunch to contrast the creamy Basque texture;
At the centre, oak-aged rum raspberry compote adds brightness and slight acidity to cut through the richness;
Finished with a touch of fleur de sel to sharpen the chocolate flavour and balance the overall sweetness.
